Sautéed Prawns with Longjing Tea Recipe |

75 g dried Longjing tea leaves 400 g medium-sized shrimps ½ tablespoon salt ½ tablespoon cornstarch 2 tablespoons egg white Sauce: 2 tablespoons Longjing tea ½ tablespoon cornstarch |
Method: In a small glass, steep the Longjing tea leaves in boiling water. Cover and set aside for 2 minutes. In a small pot, bring some water to the boil, then turn off the fire. Put the shrimps into the hot water, and add in the Longjing tea (along with the tea leaves). Allow the shrimps to soak in this mixture for 20 to 30 seconds. Remove the shrimps and peel off their shells. Set aside the tea mixture. Mix the salt, cornstarch and egg white into a smooth paste to make the seasoning. Then mix the peeled shrimps with this seasoning until they are well-coated. Heat some oil in a wok and deep fry the shrimps for about 1 minute. Dish out shrimps. For the sauce, mix the 2 tablespoons of Longjing tea (without the tea leaves) with the cornstarch. This should be done by sprinkling the cornstarch onto the tea, then mixing until smooth. Remove most of the oil from the wok, leaving 1 teaspoon. Heat the wok again. When the oil is hot, pour in the sauce and stir. Then add the shrimps and heat through briefly. Serve hot. |
