Pulut Panggang – Glutinous Rice Recipe(Grilled Glutinous Rice Cakes Wrapped in Banana Leaves) |
Ingredients: Makes 10 |
200 g glutinous rice 100 ml diluted coconut milk ¼ teaspoon salt 10 pieces banana leaves Filling: 150 g mackerel fish, flaked and mashed 100 g dried shrimps, minced 2 stalks lemon grass, minced (used only the bottom inner tender part) 1 teaspoon chili paste (chili boh) 5 pips garlic, minced ½ grated white coconut salt to taste |
Method: Steam glutinous rice until half cooked. Add in concentrated coconut milk and salt. Mix well. Continue to steam until cooked. Meanwhile, mix all filling ingredients well. Fry over medium heat until dry and keep aside. Soak banana leaves in warm water until soft and cut into 6-inch squares. Brush some oil on banana leaves. Spread a layer of glutinous rice and add in ½ teaspoon of filling in the middle. Roll up the glutinous rice to cover the filling then roll up the banana leaves to wrap the filling. Secure both sides with a toothpick or stapler. Grill for a while until aromatic. |
