Leila’s Rotis Recipe(Sri Lankan Bread Recipe) |
Ingredients: Makes about 12 |
4 cups rice flour, roti flour or plain (all-purpose) flour 1 teaspoon baking powder 1 cup freshly grated or desiccated coconut 2 teaspoons salt 2 teaspoons butter or margarine 1 tablespoon peeled and finely chopped onion 2 teaspoons finely chopped fresh red or green chilies 1 egg, beaten scant 2 cups water, approximately little ghee or oil for cooking |
Method: Mix flour, baking powder, coconut and salt in a large bowl. Rub in butter until evenly distributed, stir onion and chili through the flour, then add the egg and sufficient water to bind the mixture to a stiff dough. Knead until it forms a ball and does not stick to the bowl. Rest dough for 30 minutes. Take a lemon-size lump of dough and pat between floured hands to a circle the size of a bread and butter plate. Cook on a hot griddle or heavy frying pan greased very lightly. Serve hot with sambols or curries. |
