Stuffed Shiitake Mushroom with Spicy Pork Recipe |
Ingredients: Serves 2 |
5 pieces of fresh Shiitake mushrooms 200 g minced pork 1 tablespoon of spicy soy bean paste 1 sprig of scallions, trimmed and chopped finely 25 g ginger, peeled and mashed 1 teaspoon of sugar ½ cup of plain (all-purpose) flour 2 eggs, lightly beaten 1 cup of bread crumbs |
Method: Take off the stalks of fresh Shiitake mushrooms and leave aside. Mix minced pork with mashed ginger, chopped scallions and spicy soy bean paste, add sugar put in the fridge to set for about 30 minutes. Stuff Shiitake mushrooms with the pork mixture, careful not to stuff too much of pork mixture or the middle will be difficult to cook when you deep-fry later. Dip the stuffed Shiitake mushrooms with flour, beaten eggs and coat with bread crumbs. Leave in the fridge to set for about 15 minutes. Heat oil in a deep saucepan at 180°C and deep fry the stuffed Shiitake mushrooms for about 10 minutes over medium heat. Stir mushrooms as they are frying to obtain an even browning. Remove with a slotted spoon when they are cooked and golden in color. Drained and serve hot. |
