Nasi Kunyit – Turmeric Coconut Rice Recipe |

1.25 kg glutinous rice 4 large pieces dried turmeric (kunyit kering) or 1 teaspoon kunyit powder 1½ teaspoons salt Banana leaves 500 ml pure coconut cream, squeezed form 2½ grated coconuts 2 slices lemon or calamansi |
Method: Soak glutinous rice in water, lemon slices, 1 teaspoon salt and dried turmeric for at least 1 hour. Wash and line base of a steel colander or shallow bamboo basket. After 1 hour of soaking, discard dried turmeric and lemon slices, drain rice and put rice onto the banana leaves. Prepare steamer for use. When water is boiling rapidly, put in basket and steam for 1 hour or until rice is cooked and soft. Add remaining ½ teaspoon of salt to the coconut cream and slowly sprinkle the coconut cream (sprinkle until all coconut cream is used up) onto the cooked rice. Return water to rapid boiling and steam rice again, with lid on, for another 10-15 minutes more. When done, transfer rice to a serving plate. This rice can be served with any chicken curry or beef rendang. |
