Sea Perch Steamed with Chilies Lime Sauce Recipe |
Ingredients: Serves 2 |
1 sea perch weighing about 500g 6 peeled cloves of giant garlic 5 hot chilies 3 tablespoons lime juice 2 scallions 1 cup chicken stock 1 tablespoon light soy sauce 1 tablespoon fish sauce (nam pla) 5 slices ginger |
Method: Scale, clean and wash the fish. With a knife, score the flesh along the length of the fish; then, place it in a deep bowl. Chop the chilies and mix them with the chicken stock, lime juice, soy sauce and fish sauce. The dominant taste should be sour. Pour the mixture over the fish and place the scallions cut into 1 inch lengths, garlic and ginger slices alongside. After the water has begun boiling, place the fish in a steamer and steam over high heat for about 20 minutes. Remove from the steamer and serve hot with steamed fragrant rice. |
