Soy Sauce Fish Fillet Recipe(Taiwanese Recipe) |
Ingredients: Serves 6 |
300g fish fillet 3 cups oil 6 sections spring onion 1 tablespoon shredded ginger 1 teaspoon shredded red chili pepper Dash of sesame oil Ingredients for marinade: ½ egg white 1 tablespoon each wine, soy sauce ½ tablespoon cornstarch Ingredients for seasoning: 2 tablespoons thick soy sauce 1 teaspoon wine ½ teaspoon sugar |
Method: Cut the fish into thin slices of 3x5x0.2cm. Marinate fish in marinade ingredients for several minutes. Heat the wok and add 3 cups of oil. When wok reaches temperature of 120°C, pass the fish through the oil to precook. Remove and drain. Retain 2 tablespoons of oil in the wok and add spring onion, shredded ginger, shredded red chili pepper. When they becomes fragrant add the seasoning ingredients, then fish, stir-frying evenly. Sprinkle on sesame oil just before removing from wok. |
