Nasi Goreng Malaysian – Fried Rice Recipe |

4 cups cold cooked rice, preferably rice cooked the day before 3 eggs 250 g raw shrimps, shelled and de-veined 500 g pork or lean beef steak 2 medium onions, peeled 2 cloves garlic, peeled ½ teaspoon dried shrimp paste (belachan) – optional 2 tablespoons light soy sauce oil for frying Salt and pepper to taste 3 tablespoons crispy shallots (shallots, peeled, sliced and deep-fried till crispy) 1 green cucumber and 1 red tomato, thinly sliced to garnish 6 scallions, chopped to garnish |
Method: Beat eggs with salt and pepper to taste and leave aside. Heat very little oil in frying pan and make an omelet with half the beaten eggs. Turn onto a plate to cool (do not fold omelet). Repeat process with remaining beaten eggs. When cool, put one omelet on top of the other, roll up and cut into thin strips. Shell Cut beef and pork into fine strips. Chop onions roughly and put in blender container with garlic and dried shrimp paste. Cover and blend to a paste. (If blender is not available, finely chop onions and crush garlic. Dissolve dried shrimp paste in a little hot water. Combine these three ingredients). Heat 3 tablespoons of oil in a large frying pan or wok and fry the blended ingredients until cooked and fragrant. Add shrimps and meat to pan and fry, stirring constantly, until they are cooked. Add 2 tablespoons more oil and when hot stir in the rice tossing and mixing thoroughly until very hot and aromatic. Sprinkle with soy sauce and mix evenly. Serve the fried rice garnished with strips of omelet, fried crispy shallots, cucumber, tomato and chopped scallions. |
