Ingredients

Aubergine with Spicy Garlic Sauce Recipe: Serves 2
450g Asian aubergine150g ground pork, beef, or chicken
2 tablespoons minced scallions2 tablespoons minced ginger root
2 tablespoons minced garlic1 teaspoon chili paste
4 tablespoons soy sauce2 teaspoons cooking wine
1 teaspoon sugar4 tablespoons stock or water
½ tablespoon cornstarch

Method:

  1. Peel aubergine and cut into long, thick strips. Soak in water then set aside. Drain thoroughly before use.
  2. Heat 3 tablespoons oil in a pan, stir-fry scallions, ginger root, garlic, and chili paste until fragrant.
  3. Add the ground meat and stir-fry until cooked.
  4. Add the aubergine and stir-fry for several minutes until soft.
  5. Pour in the soy sauce, cooking wine, sugar, and stock or water. Bring to a boil until the sauce thickens.
  6. Add chopped scallions as desired.
  7. Remove from heat and serve the delicious Aubergine Stir-Fry with rice and vegetables.
